Again, let me ask this directly. Do you think it's safe to be able to say, watch YouTube or read Twitter on this thing while driving?

Safer than a plethora of other already-existent things, depending on context. (For example, I'd rate "watching Youtube on that thing" to a roadside animated billboard)
How distracting do you think that would be? 100% ? 35% ? 60% ? And would that percentage change depending on differing conditions, people, situations, methodologies, experience, etc.? And how does all that compare to things that already exist within a modern day vehicle & driving scenarios?

It depends on the person. But the kinds of people who let themselves be distracted by trying to text on a touchscreen while driving are the same ones that would be browsing twitter or looking up youtube videos while driving. Remember, watching any kind of video while driving is illegal (I'm still not sure how that stupid billboard is allowed).

Bigger cities are inundated with them - I don't even notice it.

Honestly though, anyone dumb enough to watch youtube while driving is also dumb enough to do any number of other equally dumb things while driving. Nothing you can do about stupid.
At any rate, get used to this sort of thing being common, and there won't be anything we can do about it - these kinds of devices will, in the near future, be small enough to not be detectable unless you're right up close. (for the record, I'm not necessarily a big fan, but I do find this stuff neat + fascinating)

Soon everything we do will be projected on any flat surface from a pendent.First in two dee then in 3.We will in a live world of white walls and empty tables.The only thing of material value will be food and clothes and even they will have a projected image eventually. Welcome to the matrix.
