iPhone newbie questions

On a related note, ended up getting an iphone 4s for work.

I guess we have a pretty sparse data plan so trying to keep use down as much as I can.

So...

1) If I turn off the "cellular data" option in the settings, I can still text/talk correct?

2) If I sign into a wifi network once, will the phone always log into it once it gets into range? Will it store every network I ever log into?
