I spent only a few minutes looking, and while I know consuming alcohol is sinful behaviour in Islam faith, but I haven't successfully found a section prohibiting serving alcohol. Unless I've missed it, she "recently discovered" this probably to create some human rights BS with her employer.

Time to learn to leave your faith in your place of worship.
She has a job that requires her to serve alcohol to passengers, she then converted to Islam which she claims "prohibits" her from serving alcohol. Sounds like she's just trying to play the game to me.
Maybe she'd be happier flying for a Middle Eastern carrier such as Emirates or Qatar, oh wait, they serve alcohol as well.
