Buttermilk Pie

Anybody ever tasted this? We have a family BBQ coming up next month and we're going with a southern menu, you know, ribs and brisket and such, and I got dessert duty. I've come across a number of versions of this pie and it has my interest. I can imagine it as a sort of cheesecakey thing, but I wouldn't mind hearing from someone who has actually tasted the dish.

Buttermilk pie is more a custard type pie. You can add flavourings to suit - vanilla, lemon, orange, peppermint, orange or lemon zest, etc.

I'm going to test fly the recipe in advance of the BBQ date, cuz I might want to fiddle around with it. I had a thought today that I could try sweetening it with maple syrup instead of sugar.

If you want to sweeten with maple syrup, the recipe will give you an idea of how much to use depending on how sweet you like it.

Buttermilk Maple Filling
6 egg yolks
1/4 cup flour
2 tbsp. brown sugar
1/3 - 2/3 cups pure maple syrup, or to taste - preferably grade B
2 cups buttermilk
1 tsp. pure vanilla extract
1/2 tsp. salt

Gonna try the basic recipe today and go from there. There's plenty out there but from what I see the ones with the best reviews have a couple of things in common: 1.) the pastry is baked first, allowing the filling to be baked at a lower temperature, and 2.) the egg whites are beaten separately before being added to the mix.

My daughter makes a buttermilk pie that just about kills me, I could eat the whole damn thing, it is that good. Now I am going to have to bug her to make one today, now that it is in my mind.

I went with the basic, plain-jane recipe and it was just a tad lacking, but definitely has potential. I'm going to run it again with a generous splash of vanilla and a healthy dollop of fresh whipped cream on top. (did I say "healthy"?)

I think some Kahlua would be fabulous in that!!!

In addition to using different flavourings, you can also combine equal amounts of granulated sugar and dark brown sugar for a different taste.

You can also add 1/2 tsp. each of ground cinnamon and sugar to the crust.
