Did before I moved here. No problem but you have to make sure the top of the stove and the bottom of the pot are clean or else any gunk could scratch the surface. Also, DO NOT slide the pan around while cooking or removing the pan from the stove - LIFT the pan straight up and off the burner.

Heat transfer is great if your pan has a flat bottom. If it has a slight curve, heat transfer will still be good but a bit on the uneven side.

Fresh Scallops flown in from Nova Scotia today, pan fried with Butter and Garlic Scapes out of our Garlic patch and salad.

Oh BSuds I'm so happy you're talking about garlic scapes. I've never known what to DO with them - always end up in the green bin or compost bin. I've never cooked with them before. Mine are about "to scape" anyday now. Do you just use the top part or part of the scape stalk ?????

I chopped them up like chives and added them to the butter near the end of cooking.
Very mild garlic flavour, not overpowering at all.
You can freeze them as well if you blanche them for 30 sec in boiling water then into cold. Then freeze on a cookie tray.
