3 nights in Vegas - mid week is the way to go - cheap, cheap, cheap ;)
If I were to do it locally, there are a lot of great restaurants in Vernon and Kelowna - followed by a nice stroll. Nothing to expensive - just quality time together is all that matters.

Rotary Centre for the Arts has a live jazz jam night on Thursday evenings. Sit at the very very back and have a latte. View art all around the building for some walking and talking.
As WW3 develops, no one is going to be dissing the "preppers." What have you done?
