Oops, forgot to mention ... when adding nuts or whatever, after you've dusted them in the flour make them the last ingredient you blend into the batter then place into muffin tins or loaf / cake pans.

Well today, was a great success. I made "Bread pudding" with a Rum, brown sugar sauce.
I had some old brown sugar that was as hard as an anvil, bread that was in the freezer way too long, and a 3/4 bottle of Navy Rum that Mom used for Christmas cakes.
I used everything up and made a sauce from the rum, sugar and added butter.
While I was making the sauce, I only used a portion of the 151 proof rum to make the sauce, and when I turned around, the rest of it just evaporated.
I have a GREAT tasting bread pudding ............where was I going with this topic?...........the kitchen smells.......really good.
I think I have become ........over....come......by........fumes.
I don't care.....it tastes really good, and no flour required......

Well, today I am on a roll. The next 3 day's menus will be rolled.
Tonight, lettuce leaves rolled with fresh garlic prawns, rice noodles, cucumber, radish, bean sprouts, broccoli (just a little bit), shredded carrot, and 6 different dipping sauces. (see photo).
Tomorrow, Thursday, will be Tortilla shells rolled with lettuce, Tequila/lime/salt marinated chicken breast, rice, cheddar cheese, celery, green pepper, broccoli, and red onion. A new dressing from Kraft came out, (Lime) for the dipping sauce.
Friday will be Rice paper wrappers, rolled with everything I liked from the 2 above. Maybe peanut sauce as the dip and extra chili peppers.
Saturday, BBQ STEAK, baked potato and corn.

Today's roll-ups didn't work out so well. I am sure they will taste great but, there is no way that they can be dipped. Instead of 1 leaf of lettuce each, it took 3 and even at that they still spilled out each end.
I don't eat 3 leaves of lettuce in the middle of summer, Now I have 9 leaves in 3 roll ups.
Won't be doing this again.

You're using the wrong lettuce. Use Iceburg lettuce. It's much firmer and what is usually used for lettuce wraps.
Cut the whole head in half, then cut the stem out by cutting a triangle shape, then remove a bit of the small dense middle leaves and you'll be left with nice sized round bowl shaped pieces of lettuce perfect for filling with whatever.

I did use iceberg and I did cut most of the hard core from the end of the leaves. I think I put too much stuff inside.

I was mistaken, I used leaf lettuce and not Iceberg. Thanks for the tip, it sounds more practical to use Iceberg.
