I've read on another forum that Illichmann's will sell Tender Quick or it's equivalent. Helmut might also. I'll check it out tomorrow.

Helmut West Hi. We mix our curing ingredients from scratch dependent on product and process. We can mix a complete blend or just sell you the sodium nitrite or sodium nitrate. If you want a complete blend just let us know what type of meat you are using and what method dry rub or wet brine and we will blend for you either the exact amount for your rub or brine weight or supply you with a bulk unit. We blend everything in Vernon so just give us one business day to get it to our Kelowna location if that's more convenient for you.

Maple.... I've never used the red maple but from what I've read others have. Like some of the folk on that link I posted for you on maple *nudge nudge wink wink.

Be aware that the way I brined mine is just one way to do it. There are other cures out there like Prague Powder, #1 and #2 and are used differently. One thing that doesn't change....follow the directions.

Just trying to help :)
Hopefully this will encourage others to post about what foods they have smoked. We learn from experience whether it be our own or that of others. I can advise on the how to of it but there are a lot of people here that are much more knowledgeable on the subject than I.

I found this on a Google search for 'EQ (equilibrium) brine calculator'. There are others but they are similar in that they use measured weight instead of quantity. You can find others that use the basic ingredients also, like nitrates and nitrites. Or ask the folks at Helmut's ;)

Just ordered spices for back bacon from Helmuts.
$10 for 420grams good for 10kg which is the minimum they prepare.

Nice!
When I saw their price list I thought it a bit too much but when you consider that the mix is custom to your preferences and goes way beyond the simple TQ method I used then you're doing good. Also, those people are pros. This is how they've been making a living for a heck of a long time. Their advice/instructions for safe use are priceless. Ask questions, they answer them.

For a first time cost is not a consideration :)
Hopefully walmart will restock TQ soon

Well, sent my wife, she waited 10 mins while they were checking and phoning and blah blah blah, nope.
Was supposed to be at Helmuts Kelowna, but wasn't. Pick u tomorrow Helmuts Vernon.
She had to go to town anyway and will be in Vernon tomorrow, but this is a bit too much of a hassle.
