God I would hate to work for any company that plants a camera in my face, unless of course I get a 1 way view into the boss' offices so I can monitor their behaviour. So we can make sure they too, are always working, because if they're innocent, then they got nothing to hide, right?

All the employer should need to do if they want to use these cameras is make a contract stating that you agree to their use if you take the job.
This is quite common at certain work places where there are hundreds and hundred of cameras recording almost your every move. They even have the right to install them in your living quarters on site if they have reasonable grounds to suspect you of breaking their rules. Try working at certain mines, especially the diamond mines or gold mines.
You have 2 options. Sign on the line and accept the job, or go find someplace else to work.

It would be curious how many employers use security cameras to monitor their own employees.
