Grammar Questions

1.) When writing a business letter, should the 'sincerely' in 'Yours ........" be capitalized?

2.) When a hyphenated word appears in a title, should the second word be capitalized as well as the first?

This isn't a quiz, just a couple of things that have always given me pause.
