Can one atone for a small evil, such as blowing a shift at work, by performing an act that contributes to the greater good, like baking a few dozen chocolate chip cookies?

I guess it depends on what exactly you define as an evil?
In my understanding Karma comes in to play if your actions affects another person, good or bad. No karmic debt goes unpaid, but also no karmic good goes unrewarded.

If you feel the need to take cookies, go for it. I don't know how it would relate to karma, but if nothing else it's a nice gesture. :)
