We had a Beef Dip.
So I saw a bumper sticker today that said, I'm a Veterinarian so I drive like an animal.
I suddenly realised how many Proctologists are on the road!

Ribs in the InstantPot and probably do some Potato Patties in the deep fryer to go with it.
So I saw a bumper sticker today that said, I'm a Veterinarian so I drive like an animal.

The men are gone up island. Us women had air fryer potstickers (aka Gyoza or dumplings) and asparagus.

Tonight will be;

A small inside roast beef.

1 potato (oven roasted and browned)

Yorkshire pudding.

Peas

And of course.....a rich wine gravy and a glass of red wine.

.77kg roast = $12.....less than the cost of 1 steak, will make for 2 meals and a sandwich.

I do love to read what people eat! Shakshuka seems intimidating to me, one of these days.

^^^Don't let a recipe intimidate you. Shakshuka is easy to make once you get the ingredients chopped/diced.

Traditional Shakshuka
2 tbsp. olive oil
1 medium onion, diced
1 red bell pepper, seeded and diced
4 cloves garlic, finely chopped
2 tsp. paprika
1 tsp. cumin
1/4 tsp. chili powder
1 28-oz. can whole peeled tomatoes
6 large eggs
salt and pepper to taste
1 small bunch fresh cilantro, chopped
1 small bunch fresh parsley, chopped

Heat olive oil in a large sauté pan on medium heat. Add the chopped bell pepper and onion and cook for 5 minutes or until the onion becomes translucent. Add garlic and spices and cook an additional minute. Pour the can of tomatoes and juice into the pan and break down the tomatoes using a large spoon. Season with salt and pepper and bring the sauce to a simmer. Use your large spoon to make small wells in the sauce and crack the eggs into each well. Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking. Garnish with chopped cilantro and parsley.

Note: If desired and just before eggs are done, remove lid and top with crumbled feta or goat cheese, replace lid and finish cooking eggs and cheese will be slightly melted. Serve with pita.



Note: If you want to try it without having to buy all the spices, etc. you can get a jar of Moroccan Shakshuka cooking sauce at Superstore. Since the spice blend in this sauce is harissa based, some might find it a bit spicy as it has chilies along with a few other spices.

That recipe sounds delicious, and love the idea of pita with it, scooping up the tomato gravy! Yum, thanks for putting that out there.
