Have a pic nic ham shoulder from yesterday, maybe a broccoli and ham casserole tonight.

I've got a roast in the crock pot for tonight. It's gonna be smelling pretty delicious in here soon.

I bought and am going to attempt to cook my first "pork loin roast" any suggestions?

I always cook my pork roasts very simply. If the roast has a lot of fat, trim most of it off. I always stuff my roasts (pork, beef, chicken) with halved fresh garlic cloves. Brush some maple syrup all over the roast, followed by a sprinkling of some herbs, whatever you have on hand. Place roast in a roster with a good 1/4 to 1/2 inch of water, cover and pop in a slow oven 325 f. When it's done, let it sit a good 10 minutes before carving up.

What CC said, only I just stuff with garlic cloves and sprinkle it with seasoned salt. Also remove the lid for the last 20 mins of cooking to brown it up nicely. Once the roast is removed from the roaster, open a can of mushrooms, empty the juice from the can into the roaster, simmer to a slow boil stirring constantly, add a bit of milk to which you have added and blended in a bit of flour or corn starch. Once thickened add the mushrooms ... yummy gravey for your mashed potatoes.

I like your idea about the mushroom juice for gravy Trap...yummmmmy and again, so easy. You can also sear the roast first, to kind of lock in the juices. Heat up some oil till it's smokin hot, then put the roast in and let it 'sear' for about a minute. Do this on each side of the roast.
What would we do without garlic eh!

Searing anything in hot oil on our stove puts me in very bad books with my wife. They, whoever "they" are, need to make a big bib that fits over the stove, you know like when you eat lobster, to catch the grease spatter.
Actually maybe I should seer more, and get kicked out of the kitchen.
I often sear stew meat prior to making a stew though, or if I use inside round steak in my slow cooker it gets seared first. The pan can be covered in those cases to prevent grease spatter.

You could also put the pork roast in when you turn the oven on. Uncovered during the preheat.

Last night, I made a low carb meal because the night before we carbed out at my aunties-homemade perogies,dessert,wine,etc.
Dinner was good.Dipped chicken breasts in melted butter and then dredged with flour and seasoning. I used coconut flour.
Then put them in a baking dish,topped with a couple of cups of sliced fresh mushrooms and a pint of half and half. Baked for 45 minutes. Served with cauliflower fried rice.Grate cauliflower until it resembles rice sort of(I use the food processor). Stirfry with a bit of oil,mushrooms,green onions garlic and Bragg's soy seasoning. I also added an scramble fried egg to the mixture. Very good dinner.
There's some chicken left over and I'm making a ceasar salad to go along.
I've got a painter here and things are pretty messy so not much real cooking will happen for the rest of the week
