In home breadmaker works really, really well. You even get to choose what kind you want and what quality of "goodness" you put in it. Put the ingredients into the pan, stick it in the machine, push a button or two and a few hours later - presto! You have bread!

Bonus feature - your home smells heavenly (figure of speech - I don't really know what heaven smells like).

When I have the time I prefer to make my own bread. Then I know whats in it. Way too much sodium in bought bread.

That’s the only way to be sure of what’s in one’s bread.

Some of these additives in foods have a purpose, the alternative would be more molds and microbacteria growing in the bread. Aflatoxins are not great to eat either. Freshly baked bread, is no necessarily from freshly ground grain, which apparently isn't great for making bread.
Perhaps the FDA has decided the molds and bacteria in flours and bread are worse than the additives.

Can't say I disagree with that, preservatives have their place. I do disagree with added seed oils and sugar though.

The best bread is sourdough that you bake yourself. You know what’s in it and it’s very versatile …While in New Mexico recently the owner of Proofed Bread comped two loaves … his bread has been nominated and rightly received the Govenors endorsement as the official bread of the State … and deservedly so … his starter is 130 years old … give it a go …

2 Tbsp Margarine
2 Tbsp Honey
1 1/2 Measures Yeast (bread machine measure)
Pinch of Salt
I sometimes add Wheat Gluten, Wheat Germ etc

White flour is processed garbage contains glyphosate
Margarine is vegetable oil rancid and extracted with hexane
Powdered milk is processed from a cow that eats gmo feed sprayed chemicals, pumped full of antibiotics, bleached

I would use cleaner less adulterated ingredients

Everyone knows butter is the only choice …. Using margarine is like using dehydrogenated milk solids instead of the real thing …

It's a recipe and ingredients can be substituted as you wish. The amounts are the most important part with bread.
