Apparently asking Alan to show an example of CEILING REPAIR is off-topic. Sorry Bsuds, I won't intrude off topic anymore, you're in great hands.

I can plainly see the "flashing effect" in some of those photos.

Also covered a textured ceiling with beadboard before and it turned out great. you can also use cedar or wood planks, know someone who used wood flooring on a ceiling and it also turned out great
That person must have had the same touch Michelangelo had when he painted the Sistine Chapel ..

Ok , it can be done , but you have to be an expert .

Been there , done that , can't change my mind..

no you don't have to be an expert, popcorn textured ceiling aren't a big deal to repair, like I said it's only the colour of the texture spray that is the issue, if you have pure white ceilings it will just blend in, been there done that  a good painter can patch it and then paint the ceilings if it doesn't

Can you paint over the stain? spray painting would work best on those textured ceiling
The small area that is water damage I may just have to do that. The larger one the ceiling was removed to look for a leak.

Your handyman did not show up today and has not retuned my text. Guess I'm still looking for someone. :-X

Update:

The handyman that Alan595 recommended has been awesome. He was here within a day of me contacting him and will be done tomorrow. Taping and mudding has to dry between coats of course. Tomorrow he will be sanding.

Thanks Alan595.
