This is dinner tonight. We call it Bill's Special. It's like a Shepards pie.

Over at a family members for dinner last night, and we shared and compared a couple of after dinner drinks.
We did keep the drinks to a minimum.

Cheese, crackers, sausage, fruit, raw veggies. That's our standard on NYE.

Leftover Chili for my at work dinner BUT then late tonight when I get home FONDUE! Our NYE tradition.
1 Med onion chopped and sauted
3-50 cloves of garlic (up to you how many. lol)
Add whatever spices you like, we have a homemade beef mix we use.
The following was the original but you can change as per you personal taste
1 can mushrooms (or fresh)
1 can tomato soup (I now use a combination of sauce and paste) also add water to thin if using paste.
Frozen mixed Veggies in an amount to your preference. Can also use canned
Enough potatoes to cover the top. I chop up small pieces and fry first. Can be done with mashed or shredded or frozen hash browns if you prefer.
I do all that in a fry pan then into a casserole dish or cast iron pot.
Pot into oven at 350 for at least an hour if I'm doing longer I sometimes reduce that to 325.
Lots of shredded cheese of your choice on top for the last 15 min to melt. I used a shredded Tex-Mex on this one.
We like a Cheddar Mozza mix as well
I think that covers it. It's very versatile and you can do pretty much what you want with it. Add or subtract what you want.

Re: What's for dinner tonight?
I decided to make my last day of the year to be a lazy day, so Chinese take-out.
My order was chicken fried rice & curry chicken with vegetables (highly unlikely any Chinese takeout can screw this up).

I'm having Norwegian Christmas Eve supper again for New Year's:
my own lutefisk (traditional recipe), potatoes and peas.
Don't care for flatbrod so didn't make any of that.

They can if you are in Kelowna.
We did that last year. At least we tried, by the time we called to order we would have been lucky to get it by the next year!
Tried several Chinese take outs in the months following and there is not 1 we would order from again. I sure miss the Chinese food in Vancouver. Too bad Ruby's closed as they were decent.

As soon as I seen Her Obituary in Castanet I figure out why they closed down the restaurant.Bsuds wrote: ↑Dec 31st, 2021, 6:48 pmThey can if you are in Kelowna.

Tonight I made my order online, by the time I got there it was ready to go.

Re: What's for dinner tonight?
Until 15 ? years ago, I always called the creation of a casserole (?) with mashed potatoes and ground beef, "Shepard's Pie"
I then learned that "real" Sheppard's Pie was made with lamb and the one I've been making is called "Cottage Pie" (I still mostly call it Shepard's Pie)
Came across a recipe created by Darren McGrady, he is the former Kensington Palace chef. He cooked for William and Harry since they were tiny babies. His "Cottage Pie" was the favorite of William.
The recipe was printed in a magazine article.
If anyone is interested, I can provide the pdf.
