Carrots? I plant 3 successive crops thru summer. Last planting I do is Aug 15 so I can clear out garden totally by Oct 21.
Sufficiently advanced incompetence is indistinguishable from malice. There’s a certain point at which ignorance becomes malice, at which there is simply no way to become THAT ignorant except deliberately and maliciously.

Nice cabbage! Everything is a personal preference, I'd be making coleslaw out of it but that's just me.
My plans for the cabbage are Winter Salad. Mom's recipe

I will either have to get a couple more cabbages (since that was the only one ready) or cut down the recipe.
I haven't failed until I quit.

^^^ that sounds suspiciously similar to a slaw a now-deceased pal made. It kept in fridge for ages. If this is the same, could you let me know if this recipe does the same?

Sure Cats,

Winter Salad - makes about 10 quarts
3 Cabbages
6 large onions
6 long carrots
1 green pepper
1 red pepper
(if cabbages are big you will need to add more of the other veggies, and make more syrup)

Chop or shred veggies, cover with 1/2 cup coarse salt and cold water; let stand 3 hours. Make syrup in the interval.
Drain well and put in mason jars (really mash it in there with a wooden spoon). Cover with syrup.

Syrup:
1 quart vinegar
5 cups sugar
1 tbsp celery seed
1 tbsp mustard seed
(my notes suggest doubling the syrup, you don't have to allow the syrup to cool although mom's recipe says to use the syrup cold)

Process in canner for 15 minutes at full boil. Check seals when cooled.

I make this every few years, goes really well with pulled pork or anything you might have coleslaw with.
When you do open a jar, it will last a really long time in the fridge.
I haven't failed until I quit.

Canning red currant juice tonight. What a process! Oh, and one red currant bush for sale. [icon_lol2.gif]
As WW3 develops, no one is going to be dissing the "preppers." What have you done?

Remember when you gave me 2 current bushes? I have one and I gave one to MIL - this is the first year hers has born fruit, and it is apparently loaded :)

I get fruit off of mine every few years or so.

I hope all who planted green beans this spring are overwhelmed as I am with picking, cleaning, blanching and freezing them.

A bumper crop.

We might but not our favorite. Ok to use in a casserole but too mushy for me.

We did some a couple of years ago without blanching. I read somewhere that tou didn't have to.
They were gross to say the least and all went in the compost.
