Re: What's for dinner tonight?
Last night I made a saugage penne.
Tonight I'm having marinated snapper (purchased premarinated), potato pack (potato, onion and carrot with olive oil & spices wrapped in foil cooked on BBQ) steamed carrots and garden salad.
1 pk. sausages (the pack I bought had 5 large sausages in it)
1 red onion
1 pepper
mushrooms
1 can diced tomatoes
1 jar pasta sauce
1 pkg. penne noodles
Cook noodles and drain. Cut up sausages into bite size pieces and fry up till no longer pink. Add chopped veggies, I like mine chopped quite large. cook till tender crisp. Add tomatoes, noodles, pasta sauce and simmer for a couple minutes. Enjoy. You could vary any of the veggies or types of sausage for different flavour combos.

Ask the butcher or look whenever you're in there. They don't always have it here either. It's just a section right in where all the other meats are but it usually has beef and pork mixed together. Bought a small pork tenderloin for $3 and some cheap chops too.

I concur. Bison (buffalo) is delicious. I cooked with it quite a bit, however I've asked the butchers here if they carry it and they wont as there is not the demand. *sigh*
Ostrich is another wonderful lean and incredibly tasty meat. If you have a chance to try it, go for it.

When we moved here I was so surprised how inexpensive bison was compared to back East.

Re: What's for dinner tonight?
Bison is really lean and we add a little olive oil to the burgers when mixing them up. I've never had bison steaks but I've heard they are good, but can dry out easily when cooking. We had ostrich in a restaurant, but never made it at home. Is it easy to cook with?
Because of bisons lean nature,a good pinot blanc or some other heftier white would work too. I ended up opening a bottle of Stickleback from Australia. IT's a cab/sauv/shiraz/grenache blend. And it was cheap and a screwcap-we loved it! Will definately pick this one up again.

A favourite quick meal at our house:
fry up either some lean ground beef or cubed steak with some garlic (onions too when I'm in the mood)
add an oxo cube and water
bring to a boil and add in some thickener
serve over mashed potatoes and add a couple veggies on the side.
Also, I make my own pizza crusts and let everyone make their own pizzas. Or stir frys are always quick and can change them all the time.

Re: What's for dinner tonight?
I just made a casserole, combining Tawny's chicken dinner and a fav casserole I always make for special meals like Christmas. I have to say, it was delicious and my son rated it 4.5 our of 5.
Ingredients
2-3 boneless & skinless chicken breasts, or a pkg of boneless & skinless chicken thighs
2 tbsp of oil
2 tsp curry
sprinkle of pepper
sprinkle of garlic powder
broccoli or cauliflower
1 heaping cup shredded cheddar cheese, plus 1/4 cup for top
1 can of cream of mushroom soup
1 pkg Uncle Bens long grain wild rice
fine bread crumbs
Lightly fry some boneless chicken breasts or thighs in a small amount of oil. Season with pepper and garlic powder.
Lightly steam cauliflower or broccoli till tender crisp.
Cook a box of Uncle Bens long grain wild rice according to directions.
In a Medium bowl, combine a can of cream of mushroom soup, a heaping cup of shredded cheddar cheese and curry power.
Place the steamed cauliflower in the bottom of a 2 qt casserole. Place the chicken over the cauliflower. Mix the rice and cheese/soup mixture together and pour over the chicken. Sprinkle a bit of shredded cheddar cheese over top, followed by some bread crumbs.
Bake in a 350 F oven, bottom rack uncovered for about 25 minutes.
Serve with a nice garden salad and dinner rolls

You used to be able to get an ostrich burger at the Bunkhouse up in East Kelowna. It was $8.99, I think. It's a white meat (and I do mean white) and I found it quite dry - so a beer gets it down better

I do love buffalo burgers, tho - very tasty!!! I had one of those at Expo. (as well as cod tongues and scruncheons - which I loved!)

Re: What's for dinner tonight?
Can you still buy Pizza Mixes? The kind that used to come in a box with a can of sauce, the mix for the dough, and grated cheese for the top?
I used to make this from one or two mixes (depending on how big a pan I wanted to make) ...
DEEP DISH PIZZA
Pizza mix - one pkg for 8x8 pan or two pkgs for 9x13 pan
2 lbs (+ -) lean ground beef
1 diced onion
grated mozza cheese
Make pizza dough according to the directions on the box. Line the bottom and sides (to the top) of the pan.
Fry the onion and ground beef until cooked. Drain well. Stir the tomato sauce into the mixture. Put it all in the pan on top of the dough.
Add whatever other pizza toppings your little heart desires.
Top with the cheeses. Cover with tin foil.
Bake in the oven 350 F for about 20 mins. Then uncover it and cook some more until the crust is browned - about 10 mins.
Add a salad and dinner is served! Oh - and "Garlic and whatever bread" for BriTer ...
